Healthy recipes for June Parties

Hi guys! At the moment that I have written this text, I am in Brazil, it would be an awesome period, were it not the pandemic, after all, it is the time of Saint Johns. For old time’s sake when we went to kermess, in this so festive month, how about learning some healthy recipes for June’s parties? All of them in the Lu style of cooking, delicious, practical, and easy to make.

Origin of the June Parties

Did you know that the June Parties have origin in pagan parties executed in ancient Europe? These celebrations took place in the summer solstice, an occasion when rituals were performed for getting abundance in the harvests, fertility, and for keeping bad spirits away.

With the objective to consolidate Catholicism, the church began to include these, and many others, pagan festivities in its calendar, but with a Christian appearance. At the time of colonization (Century 16th), the Portuguese’s brought this tradition to Brazil, and we put our special touch on it.

In the beginning, it was known as “Joanina” Party, in tribute to Saint Jhon’s, as time goes by, the time was modified to June Party in reference to the month and incorporating other saints into the tradition.

Easy and healthy June recipes

The foods of this time are delicious, however, caloric, and not ever healthy, but the recipe that I have prepared here are lightversions, suitable for those who want to keep the shape and do not give up on the flavor. So, let’s go there.

Zero Gluten Corn Cake

Ingredients

3 cups of boiled green corn tea
1/2 cup of coconut flour
1 cup of cornmeal tea
200 ml of coconut milk
3 tablespoons of coconut oil
3/4 cup of tea of xylitol sweetener
1 tablespoon of chemical yeast

How to prepare

I recommend that you utilize natural corn, which is healthier, and in some places, it is possible to purchase already cut, which is very practical.
Mix all ingredients in a blender until the mixtures get homogeneous, at the end put yeast and mix delicately. Bake it in a greased tin at 180°C / 356°F for 30 minutes.

“Paçoca” Fit (peanut candy)

Ingredients

1 cup skinless natural peanuts
3 tablespoons of panela or brown sugar
3 tablespoons of rolled oats
1 cardamom seed
1 teaspoon of powdered cinnamon

How to prepare

In an unstick frying pan, give a slight little toast in the peanut, after, take it into the blender with cardamon and panela, mix until it becomes a cream. At the same frying pan, toast cinnamon and rolled oats slightly, just to get dryer. After mix everything.

You can eat as flour, by using it as an accompaniment to other dishes or shaping and serving wrapped in napkins. In the second case, be careful, because it does not get much solid and it dissolves easily.

Cocada light

Ingredients

250g of grated dry coconut
4 tablespoons of rolled almonds (optional, but gives a special touch)
2 cups of coconut sugar, brown or xylitol sugar
½ cup of light coconut milk light or water
3 cloves

How to prepare

Place the sugar and coconut milk or water into the pan a mix until to start boiling. At sequence ad the other ingredients and go on mixing until to glue each other. Put in a greased bake pan and take to the oven to golden a little.

Light hot wine

Ingredients

100 ml de red wine
1 tea’s cup of unsweetened orange juice
10 tablespoons of xylitol
2 chopped red apples
Canela em pau a gosto
Cravo da Índia a gosto

How to prepare

Take all ingredients to the fire, except apples, which should be added as soon as boils. When this happens, get the flame down and cook it for 10 minutes more.

To finish off the festive menu, popcorn is a great choice.

Decorate your home to the June Party

Now it just needs to decorate your home for the party to get complete.

Decorate the table with a checkered tablecloth, clay dishes, and more rustic pieces. You can buy those straw hats that are cheap and give a special touch to the June party décor.
