Recipe of low carb “Escondidinho de Carne Seca (Shepherd's pie of dry meat)”

Hy guys, today I am going to share with you a recipe of low carb “escondidinho de carne”, that I have created and got delicious. Everything has started with my son, that has told me that he wanted to eat a “escondidinho” (like a Shepherd’s pie of dry meat), then you already know how moms are, is not that?

As here at home we have decided to adopt a healthier diet, I got wondering in a way to adapt the original recipe to a thinner version and based on vegetables. From there comes the idea up of using cauliflower, which is a versatile vegetable in the kitchen, and it has gotten very good. My family liked it so much that I have decided to post it so that you can reproduce there at your home.

Ingredients

1 Large cauliflower
Shredded roasted meat
Chopped black olives
6 Soup spoons of parmesan soup
4 Soup spoons of Almond flour
2 Soup spoons of Pesto sauce
Mozzarella
½ can Heavy cream
Salt

How to prepare a low carb “escondidinho de carne”

For preparing the base of my low carb “escondidinho de carne”, I have cooked a big cauliflower in water and salt. Then I hit the blender with heavy cream (sour cream). As here at home, there are people who do not like this vegetable’s taste, I have added two spoons of soup of pesto sauce to disguise the flavor, and two more spoons of parmesan cheese, then I have hit it a little more until to form a very soft puree.

With the ready base, I have filled the bottom of a roasting dish, then I have put a layer of shredded meat, threw some chopped black olives above, and the third layer of mozzarella, at sequence I have added the rest of the cauliflower’s cream.

So, to get that final touching, I have mixed 4 spoons of parmesan, 4 spoons of almond flour, 4 spoons of mozzarella, making a mixture. I have thrown this mixture at above everything and taken that to the oven at 180°C / 350°F, after toasting, I have let it brown.

Guys, it has gotten very good.

Do you know what is cool? You can vary the filling, with shredded chicken, shrimp, dry meat, mushrooms, anyway, what you have in your home.
